I am not a fussy sourdough baker, I only feed my starter when I need to bake and it lives in the fridge otherwise waiting to be used. My bread orders are prepped on Thursday for Friday pickup so I feed it on Wednesday night and again Thursday morning for prep later in the day. This rhythm works well for me and reduces waste and extra work for me! Sourdough doesn’t have to be complicated. Local folks, you have til 9am tomorrow to get those orders in.
