Sourdough bread isn't always a perfect science. But when it doesn't work out....you just make something else with it. Bake the cubes in a low temp oven ( I did 200 for about an hour) until desired crispiness and store in am alright container. Perfect for soups, salads, and just snacking!

Did you know you could plant sprouted potatoes? These are organic red potatoes that haven't been sprayed with any inhibitors for sprouting so they have to be used quickly. I missed this bag in the pantry and rather than trash them, I'm going to plant them.

You need to cut around the eyes and spread them on a flat pan or tray and store in a cool, dry place to form a crust on the exposed sides. Plant them about 6 inches deep and watch for the growth at the surface! Easy easy!

Did your momma somehow stealthily prep Sunday lunch for after church? I rarely remember mine in the kitchen before church, but we ALWAYS had a hot meal after church.

I grew up in a small town in NC, and there were no restaurants open on Sunday (until we got a fast food one when I was older)....most everything was closed on Sunday for that matter.

I don't remember her bustling around in the kitchen before she got us dressed and to church so she could practice the organ for that day's service. But she must have because we always had a hot meal. Interesting the things we forgetoverr the years.

I love to eat out occasionally, but let's be honest...it's expensive, not often the healthiest option, and there is always a long wait on Sunday, at least around our town. With a 5 year old....momma doesn't have the time of patience or budget for that. So I manage to make something to eat after we get home. Today my hubby is playing bass, so we will get home around 1pm and we're ready to eat....and quick. So this casserole will go in while I prep a quick salad, and we are good to go.

Freedom Ranger chicks arrived the last week of Nov

Freedom Ranger chicks arrived the last week of November. They lived in our storage building (for too long...lol), ate so much food, and lived out their lives in the chicken tractors in our backyard. They were processed last weekend with the help of some awesome friends, and it was a great experience. Knowing where your food comes from, raising it yourself, can be daunting, but it's so, so worth it. I know exactly what these chickens ate for their whole lives, and I raised them and processed them in the most humane, and loving way as possible, saying a prayer of thanks over each one as I loaded them up to process them. It was hard work, of course, but I'm thankful for the experience. How often do you need to feed your starter? Well it depends on your baking needs. I have a jar that I regularly use and discard back into that stays pretty happy and bubbly.

I also keep a jar in the fridge as a backup that gets neglected from time to time. It will develop a liquid on top call hooch and will smell more robustly sour when it's hungry. I usually pour the hooch off and feed it and place back in the fridge.

I'm sharing starter with a few ladies this week , so I'm feeding some starter for them so it's nice and bubbly and ready to go for them.

You technically can neglect a starter too long and if you see color in it (usually pink or orange) I'd toss it and start over...bacteria has taken over and nobody wants that. It's good to keep a backup but don't forget to feed it! You can also dehydrate some if you like and store in a jar in your pantry as a backup.

Don't make it complicated!

Meat birds are finally outside after much delay due to weather, but we could not leave them inside anymore so moving day was in the mud and rain. Today was a tough learning experience here. I was not aware that meat birds were not easily integrated if raised separately....and it almost cost me this bird, who was already the runt, but had been doing fine in her brooder pen until today. I caught it in time and got her separated, but now we have to see if she will heal up. We are still learning about raising meat birds. We raised out last batch when it was warm and they went out as soon as they had their feathers. This batch has been in our storage building with heat due to the super cold temps. Their pens are nasty because they're too bug to be inside and poop a LOT, so I'm having to clean it every other day. Today they're outside in a redneckarrific contraption I made on the fly so they could go out for the day and I could completely clean out their pens. Y'all. Use what you have, start where you are. Creamy Garlic and Spinach Spaghetti Squash Cassero

Creamy Garlic and Spinach Spaghetti Squash Casserole

1 spaghetti squash medium sized

1 tbsp butter

4 garlic cloves, minced

16 ounces spinach

4 ounces cream cheese

1/2 cup half n half or heavy whipping cream

1/2 cup parmesan cheese powdered is fine

1/2 tsp salt

1/2 tsp pepper

pinch red pepper flakes

2 cups diced, cooked chicken or 1 lb ground chicken, cooked

8 ounces mozzarella cheese

Instructions

1. Prick sides of spaghetti squash with fork and bake on a cookie sheet whole for 60 to 75 minutes at 375 degrees or until you can press the flesh in with an oven mitt covered hand. Cool for 10 minutes and then cut in half and remove seeds and pull the spaghetti with a fork down to the rind of the squash. Set aside.

2. Cook chicken breasts and dice in small pieces or cook ground chicken and drain, whichever you prefer. Set aside

3. In a large pot, melt butter, add garlic and then spinach to wilt. I cut the spinach as it's cooking with kitchen shears to make it easier to stir in with the squash

4. Add cream cheese, heavy whipping cream (or half n half), parmesan, salt and pepper and red pepper flakes to taste

5. Mix in squash and chicken and stir until well combined

6. Add a handful of mozzarella cheese (1/4 cup or so) and stir well

7. Pour into a 9x13 pan and cover with remaining mozzarella cheese

8. Bake at 400 degrees for 35 minutes and let cool for 5 to 10 minutes to help sauce thicken up before serving

Notes
You can make this ahead and store in fridge until time to bake, Remove casserole dish from refrigerator while oven heats up for best results.

Reheats well.
