Happy Monday, y'all. How is it almost May? My garden is still a hot mess, and that's ok. We will get the weeds under control, but everything is looking great so far. Tomatoes and peppers are almost ready to plant and I've got bean seeds and cucumbers ready to go in the ground as well.How's your garden coming?I am anxious and excited to start the mentorship with @gracewalkfarm and @whisperingwillowfrm next week to grow our garden space and make the most of the space we have. How are you preparing for your week? Are you a meal prepper?I don't always want to spend the afternoon in the kitchen, but i never complain when I have premade options during the week to grab quickly. I soend less at the store on premade items, because organic clean options are pricey. Shew!Today I made1) High protein egg biscuits make with almond and coconut flours (I'll report back tomorrow when I've tried them) 2) Chicken salad- I keep it simple - 2 chicken breasts, avocado mayo, relish and walnuts 3) Zucchini Bread (my daughter has been asking for this for breakfast lately 4) Protein bites with protein powder and without (for my daughter) that have nut butter, flaxseed, and chia seeds as well as oats for quick morning option or snack 5) Breakfast casserole for the hubby for quick out the door options when he works in the office part of the weekWe had homemade pizzas for lunch, so there are also leftovers from that, and we're grilling chicken wings tonight, making room in the freezer for the next round of meat birds we will be processing soon. Always seems like chicken wings are the last to get used up. 🤷🏻‍♀️Bless your future self by spending some time in the kitchen!
