Apple Quick Bread

This recipe is a basic quick bread recipe that can be used for zucchini bread as well – both are a FAVORITE in our house as well as gifting!

Apple Quick Bread

Ingredients

  • 1.5 cups all purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 cup sugar (can reduce up to half, but may affect texture and browning)
  • 1 cup finely shredded apples, unpeeled
  • 1/4 cup oil (I used avocado)
  • 1 egg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat oven to 350 degrees
  • Grease bottom and 1/2 way up sides of an 8x4x2 pan or line with parchment paper
  • In a medium bowl add flour, spices, baking soda and powder and salt. Combine and set aside
  • In a mixing bowl combine sugar, shredded apple, oil and egg
  • Add dry mixture to wet and mix gently just until combined, batter will be lumpy
  • Carefully fold in nuts, if adding
  • Spoon batter into pan and cook for 55-60 minutes or until a toothpick inserted in center comes out clean.
  • Cool on rack for 10 minutes before removing and then allow to cool completely before storing in an airtight container
