Fresh Milled Banana Cake

Fresh Milled Banana Cake

There is something special about taking simple ingredients and turning them into something that feels like home. A few overripe bananas sitting on the counter, fresh eggs from the backyard, and flour milled right before baking come together to create a cake that is both comforting and nourishing.

This Fresh Milled Banana Cake is a twist on an old-fashioned banana cake, using freshly milled soft white wheat flour for a tender crumb and a rich, wholesome flavor you just cannot get from a bag of flour that has been sitting on a grocery store shelf.

Fresh milled flour still contains the natural oils and nutrients from the wheat berry, which means it brings a beautiful depth of flavor to baked goods. It has a slightly nutty, naturally sweet taste that pairs perfectly with ripe bananas, cinnamon, and a touch of vanilla.

This recipe is also a wonderful way to use up those bananas that have gotten a little too soft for snacking. In our kitchen, we believe good food doesn’t have to be complicated. Some of the best recipes come from using what we already have and making the most of simple ingredients.

Whether you enjoy this cake with a cup of coffee in the morning, pack it in lunchboxes, or serve it as a simple dessert topped with cream cheese frosting, it’s the kind of recipe that feels like it belongs around a farmhouse table.

A few tips for baking with fresh milled flour:

  • Allow your batter to rest for about 10 minutes before baking. Fresh milled flour continues absorbing liquid, and this extra time helps create a softer texture.
  • The riper your bananas, the better! Those brown-speckled bananas bring natural sweetness and moisture.
  • Fresh milled flour can vary slightly depending on your wheat berries and mill, so pay attention to the consistency of your batter. You want it thick and smooth, not dry.

From our little corner of the world to your kitchen, I hope this Fresh Milled Banana Cake brings a little warmth and homemade goodness to your table.

Happy baking!
